What is Virgin Coconut Oil (VCO)?

Coconut oil that we see in the market is produced by pressing the copra or dried coconut using expellers, which is the primary dietary oils consumed by lot of people. Coconut oil produced in this way is a good one and healthier compared to other expeller pressed oils, as the process do not alter the fatty acid profile, all the medium chain fatty acids are kept intact.
Virgin Coconut Oil (VCO) is higher quality oil than the coconut oil produced by expellers and process starts with fresh coconut meat and not copra. The most common type of virgin coconut oil in the market is produced by drying the fresh coconut meat and then pressing the oil, as this can be mass produced. The other method is wet milling, with this method, the oil is extracted from fresh coconut meat without drying the coconut meat first. Coconut milk is expressed first by pressing it out of the wet coconut meat. The oil is then further separated from the water. Methods which can be used to separate the oil from the water include boiling, fermentation, refrigeration, enzymes, and mechanical centrifuge.
Coconut oil processed this way contains special little treats know as phytonutrients and polyphenols, which have antioxidant, antibiotic, cancer-preventative, anti-inflammatory and other tissue-supportive and tissue-protective properties.
Ayurveda physicians, experts and even households in Kerala had been manufacturing VCO  by wet milling process for medicinal and various purposes since several decades . The water from the milk extracted is separated by boiling at very low flame and continuously, the process takes 5 to 6 hours, this oil is known as urukku velichenna or ventha velichenna. The general impression is that boiling would degrade the quality of the oil. However, researches show that it is not applicable since coconut oil is thermally stable. Most of the phenolic anti-oxidants present in coconut oil are also thermally highly stable and simmering for a long time at a high temperature dissolved more anti-oxidants into the oil.
