Aviyal is an inevitable part of Kerala Sadhya (vegetarian feast) served during festivals and marriages or any occasion. It is also a vegetarian dish prepared commonly at all homes in Kerala. You will get a lot of websites and blogs explaining the recipe of this dish, but we would like to still add our version to prepare an easy and quick one.

Aviyal

 Ingredients

  • Aviyal Mix (i.e. vegetables peeled and sliced in 1 1/2″ to 2″ inch length. We can include vegetables like raw banana, drumstick, carrot, potato, beans, pumpkin, yam, ash gourd, snake gourd etc. Normally most of the vegetables which we use can be added (except bitter gourd) and it is not necessary that all those mentioned here are to be included. Aviyal can be prepared with 3 or 4 vegetables available in the kitchen.)
  • Grated coconut –  1/2 cup
  • Green Chilli – 3 sliced
  • Curry Leaf – 1 or 2 sprigs
  • Coconut Oil – 2 table spoons
  • Garlic – 3 cloves
  • Cumin powder – 1/2 tea spoon
  • Turmeric powder – 1/4 spoon
  • Salt – as required

Preparation

Cook Aviyal mix and green chilli with 1/2 cup of water and add salt when vegetables are half cooked. Use a lid to close so that the vegetables gets cooked faster. Meanwhile, grind grated coconut, cumin powder, turmeric powder and garlic in a blender or mixer to a coarse paste. Add the paste to the vegetables once they are almost cooked. Remove the lid and boil till the coconut gravy becomes thick. Switch of the flame, add curry leaves and coconut oil and close the lid. Stir before serving.
